  1. Read the rules.
  2. Learn the rules.
  3. Adhere to the rules.
  4. Train your staff in the rules however infrequently they handle food.
  5. Test their understanding of the rules using the Our Kitchen Rules Training Quiz.
  6. Supervise them until you are sure they understand and follow the rules.
  7. Record their training on the training record sheet completing the date and signature boxes.
  8. Remember to train all new members of staff and record the fact they have been trained.
  9. Regularly check that staff are following the rules and completing the daily checks on the monthly monitoring log. Management should sign off the monitoring log monthly.
  10. Ensure any chefs in charge of service understand they are responsible for completing the daily checks on the monthly monitoring sheet.
