- Read the rules.
- Learn the rules.
- Adhere to the rules.
- Train your staff in the rules however infrequently they handle food.
- Test their understanding of the rules using the Our Kitchen Rules Training Quiz.
- Supervise them until you are sure they understand and follow the rules.
- Record their training on the training record sheet completing the date and signature boxes.
- Remember to train all new members of staff and record the fact they have been trained.
- Regularly check that staff are following the rules and completing the daily checks on the monthly monitoring log. Management should sign off the monitoring log monthly.
- Ensure any chefs in charge of service understand they are responsible for completing the daily checks on the monthly monitoring sheet.
